Seren and Ryan Chu – yes, you pronounce the couple’s surname like choux, the pastry – might have taken the long route to open their neighbourhood bakery, but the wait was worth it. She’s a self-taught pâtissier, he’s a self-taught baker: together they’ve reimagined French baking through a contemporary South-East Asian lens. The result? Matcha puffs, mango chiffon cakes, yuzu pound cake and other wonders worth queuing for.
