Tuscan-toned Nora’s crackles with life opposite Rye’s foreshore, pulling an all-ages crowd with bolognese, pizza capricciosa and other perennial hits. Arancini are vessels for an eggplant ragu that radiates slow-cooked savouriness, a cheesy crunchy snack with an Americano.

A generous bowl of saucy vodka rigatoni showcases properly al dente pasta that would make any Italian smile. Red-sauce pizzas dominate the dozen or so choices, perhaps topped with a patchwork of salty sopressa, San Marzano tomato, syrupy honey, and melted fior di latte. Among the three on a white base, the prawn eats like a luxe update to garlic bread.

Nora’s dough gets a long 48-hour rise and Neapolitan-style finish so slices are thin and floppy. Eat with your hands: chunky mismatched timber furniture and a young team set the dial to relaxed. All the details are taken care of, though, from a fresh round of drinks to takeaway boxes for unfinished pizza.
